Yeah, you'll still get some chipping, regardless of what sealer you use. Make sure you start out with a good paint (Testor's Model Masters all the way...or Tamiya and Reaper work well, too. Don't even bother with cheapy craft paints). That's the best way to keep chipping to a minimum. As far as the finishes, I definitely would go for Matte. Everything else makes the figures look like they're wearing glossy vinyl. Some people suggest coating the joints with a clear super glue and then moving them rapidly while the glue dries (so that it doesn't solidify the joint), but I've never had much luck finding a super glue that doesn't dry a foggy white color.
