I know 1:12 is oversized, but I'm wondering if I painted a Scheich St. Bernard if it could pass as a Mastiff...

Anyone know if there are any other options for a Mastiff?

A Mastiff is similar in shape as a Rottweiler, but larger, watch Turner and Hooch. Hooch is a mastiif. For good images, google Mastiff and click on images. There are numerous Mastiff or Molosser breeds, and some that are extinct, so the Saint Bernard could work with your own custome paint job.
