Usually I just paint all of the unpainted details on existing vehicle/model consoles. Just painting switches/levers/dials makes a world of difference.
But the last time I did one was probably the easiest, trying to replicate the navigation system on the Guardians of the Galaxy ship form End Game. Just a sheet protector, markers, foamboard, and Fortnite pieces. Any of those MCU heads up displays can be done the same way or with clear baseball/pokemon card holders if you wan to illuminate them with an LED.
